That's actually a SCOBY, short for Symbiotic Culture of Bacteria and Yeast, aka bacteria blob.
This is what makes kombucha. Without it, you would end up with an old jar of sweet tea!

Kombucha is normally bottled up in glasses with colorful labels that have fancy wording,
like "bubbly probiotic tea" or "raw and unpasteurized"
